Preheat oven to 425 degrees (F)
Cut one side of each of the baby potatoes so the potato can lay flat on the baking sheet
Slice the potatoes almost all of the way through and fan the potato slices just enough to be able to drizzle the olive oil in between the slices*
Sprinkle the Easy Creations Lime Thyme seasoning packet over all of the potatoes
Bake at 425 degrees for 30 minutes
*Potatoes will fan quite a bit during the baking process
